This one comes from Café Uba, a project built by two producers, Julio César Madrid Tisnés and Julio Andrés Quiceno, running four farms plus their own dry mill, cupping lab, and barista training center in Risaralda. It's a serious operation built around pushing what fermentation can do, and this lot is a great example of that ambition paying off. The coffee ferments inside a bioreactor with watermelon must and starter cultures while the oxygen gets swapped out for nitrogen, a process they call Nitro that lets them dial in temperature, pH and sugar levels with real precision.
