This is one of the coolest coffees we’ve ever released and only available in 8 ounce bags in a very limited supply.
Produced by renowned Colombian innovator Edwin Noreña at Finca Campo Hermoso, this Pink Bourbon lot undergoes a high-intervention carbonic honey process… then takes it even further with a Cascade hop co-fermentation. That's right, the same hops they use in beer.
The coffee cherries first undergo an anaerobic fermentation, creating a rich, sugary must. That must is then fermented again with brewer’s yeast and Cascade hops before being reintroduced to the coffee for an extended co-fermentation phase.
The result is a cup that blurs the line between coffee and fermentation art.
We roasted this one light to let the processing shine and for you to experience the fully character of the process and bean.
In the cup, you’ll find vibrant notes of pink grapefruit, lime, florals, and botanical herbs, layered with unmistakable hoppy aromatics that leap out of the grinder.
Why This Coffee Is Special
Edwin Noreña, often nicknamed “El Alquimista”, is known for pushing fermentation boundaries, using controlled multi-stage processes and ingredients like fruit, spices… and in this case, hops.
Cascade hops are famous in craft beer for their grapefruit, citrus, and floral aroma. Those same compounds carry into the coffee during co-fermentation, creating a profile that simply can’t exist through origin or roast alone.
