They check ripeness with refractometers and ripeness bracelets, so every cherry in this Pacamara natural is picked at peak sugar. That's where the name comes from, and it's why this lot keeps winning medals year after year.

Tropical fruit leads, with mango and papaya up front, then Concord grape and cherry underneath. There's a brown sugar sweetness running through it, and as it cools you get apple, plum, and a burst of blueberry and blackberry that reminds people of a Kenyan or a Yirgacheffe. Juicy, smooth, and sweet with a floral lilac note hanging around.
